1-minute flax muffin

1-Minute Flax Muffin (Delicious!)

Many clients I work with find it hard to come up with healthy food options that are quick and easy. That’s why I was so excited when I was sent this amazing recipe for 1-minute flax muffins. This is a great breakfast option or a grab-and-go snack that anyone has time to prepare.


  • 3 tblsp ground flax seed
  • 1 tsp baking powder
  • 1 tsp olive oil (or coconut oil)
  • 1 egg
  • 1/2 scoop protein powder (I prefer vanilla or unflavoured)
  • Your favourite muffin add-ins (blueberries, raisins, cinnamon, nuts, etc)


  1. Mix all ingredients in a coffee mug
  2. Microwave it for 45-60 seconds
  3. Let it cool for a few seconds and then it will slide right out of the mug
  4. Enjoy!

Thanks Dorothy for the modified recipe – sounds delicious!

1 banana, 1 1/2 tbsp of almond butter, 1 egg, 2 heaping tbsp cocoa powder then choice of fruit, walnuts, choc chips, etc. stir all together and microwave for 2 1/2 minutes. Try it!!
