
Pancakes: No dairy, no gluten, no grains, almost no effort!
100% natural seems to be the “in” thing these days. So does gluten-free, dairy-free, low-cal, low-fat…and the list goes on and on. What is a person supposed to eat?
Well, here’s one simple yet delicious recipe for you pancake-lovers out there! Kudos to my wife for this wonderful breakfast creation. Are you ready for the ingredients list? Here goes…
Bananas and eggs.
Seriously, that’s it.
- Mash 1 ripe banana in a bowl and then mix in 2 eggs
- Coat your pan with coconut oil (or whatever cooking oil you use)
- Drop in the batter and cook one side for about 30 seconds
- Flip, and cook the other side
Done!
Top it with your favourite mixed fruit, maybe some chopped nuts and enjoy! Here are the nutritional deets:
